Apple-Apricot Chops
A tasty dish!
Serves: 4-6
Prep Time: 20 minutes
Cook Time: 7-9 hours


2 pounds pork chops
1 cup apples, chopped
1 cup apricots, chopped, dried
1/2 cup cranberries, fresh
1 onion, medium, chopped
2 ribs celery, sliced in 1/2 inch pieces
1/2 cup apple juice
1/2 cup brown sugar
1/4 cup dry sherry
salt and pepper
1 1/2 tablespoons cornstarch, mixed with 2 tablespoons cold water

Combine all ingredients; cover and cook 7 to 9 hours on low. 30 minutes
before serving, pour liquid into a separate container to skim off excess
fat. Stir in cornstarch mixture and return broth to crockpot. Continue
cooking on low until smooth and thickened.
