Citrus-Grilled Chicken Thighs
Here's a summertime grilling recipe bursting with sunny citrusy flavors that is nearly as good cooked indoors under the broiler.

Prep Time: 20 minutes
Cook Time: 30-40 minutes


Juice of 2 limes
1/3 cup orange juice
1/4 cup olive oil
2 cloves garlic, thinly sliced
Salt and freshly ground pepper, to taste
12 Chicken thighs

1. To make the marinade, whisk together the lime juice, orange juice and olive oil. Add the garlic cloves and season with salt and pepper.
2. Lay the chicken thighs in a large aluminum foil-lined roasting pan. Pour the marinade over the chicken, cover and refrigerate for 1 hour.
3. Preheat the oven to 350 degrees Farenheit. Prepare a charcoal or gas grill or preheat the broiler (see Note.)
4. Bake the chicken for 1 minutes, remove from the oven and set aside. When the coals are covered with white ask of the grill or broiler is medium hot, lift the chicken from the pan and reserve the marinade. grill or broil the chicken, turning frequently, for 15 to 20 minutes, until the juices run clear when the meat is pierced with a knife.
5. Pour the marinade into a saucepan and bring to a boil over medium-high heat. Cook for about 1 minute and then keep warm.
6. To serve, arrange the chicken thighs on a large platter and drizzle with the marinade.

Note: If broiling the chicken, it may e easier to skip the baking and cook it entirely in the broiler, particularly if the broiler is built into the oven. To broil without prebaking, turn the chicken thighs every 10 minutes, broiling for a total of 25 to 30 minutes.
