Artichoke Bottom with Spinach
A great green side dish that will compliment any meal.
Serves: 6
Prep Time: 15 minutes
Cook Time: 10 minutes


1 package frozen chopped spinach
1 tablespoon chopped onion
1/4 cup sour cream
6 artichoke bottoms
2 tablespoons melted butter
Cracked pepper

Cook and drain spinach; whip in blender with onion. Combine with sour cream and salt to taste. Mound spinach on each artichoke bottom. Drizzle melted butter over each and sprinkle with cracked pepper. Heat in oven until just hot. Serve as a vegetable or garnish for meat.
