Chesapeake Bay Crab Cakes
A great recipe for those who love crab!
Serves: 6
Prep Time: 15 minutes
Cook Time: 8 minutes


2 tablespoons onion, minced
2 tablespoons butter, or other fat
1 pound crabmeat, cleaned
1 egg, beaten
1/2 teaspoon dry mustard
1/2 teaspoon salt
Dash pepper
Dash cayenne pepper
1/2 cup dry bread crumbs

Cook onion in 2 tablespoons butter until tender. Combine all remaining ingredients except crumbs. Shape into six cakes and roll in crumbs. Place cakes in a heavy frying pan which contains about 1/8 inch fat, hot but not smoking. Fry at moderate heat. When cakes are brown on one side, turn carefully and brown the other side. Cooking time will be approximately 5 to 8 minutes. Drain on absorbent paper.
Variation: Add 1 teaspoon Worcestershire sauce, 1 teaspoon lemon juice, 1/4 teaspoon Old Bay Seasoning and 1 tablespoon minced parsley to above ingredients and cook in the same manner. Cakes may be fried in 2 tablespoons hot oil and drained on paper towels.
