Buttered Fish Fillets
This delicious fish recipe can be cooked either in the oven or over a hot covered charcoal grill.
Serves: 4-6
Prep Time: 15 minutes
Cook Time: 10 minutes


2 pounds red snapper fillets, or redfish
1/2 pound butter, melted
1 medium onion, very thinly sliced
Fresh lemon slices, or 1 tablespoon dried lemon peel

Roll fillets in about half the melted butter and place, close together, in shallow baking pan. Arrange onion slices over fish and sprinkle with lemon peel (or cover with thin lemon slices). Pour remaining melted butter over all. Bake in 450 degree oven for about 10 minutes. This fish can also be cooked over hot charcoal fire on covered grill.
