Poppy Seed Dressing
This dressing may be served with fresh fruit on a bed of lettuce.

1/2 cup fresh lime juice
1/2 cup honey
1/3 cup distilled white vinegar
1 teaspoon salt
1 cup sugar
1 tablespoon ground ginger
1 tablespoon dry mustard
2 cups Vegetable Oil
1 tablespoon poppy seeds

Proecss lime juice, honey, vinegar, salt, sugar, ginger, and dry mustard in a food processor. With machine running, slowly add oil in a thin steady stream. The dressing should be thick and translucent and should not separate. Stir in poppy seeds. Cover and refrigerate for up to 2 weeks.
