Beef Stew
Ready when you get home from a hard day's work.
Serves: 4-6
Prep Time: 10 minutes
Cook Time: 6-8 hours


4 potatoes, cubed
1 1/2 pounds cubed beef stew meat
1 1/2 cups V-8 juice
1 1/2 cups water
2 tablespoons celery flakes
1 14- to 16-ounce can tomatoes, diced, undrained
1/2 to 1 teaspoon crushed red pepper, or more according to taste
1/2 green pepper, chopped
1/2 cup shredded carrots
1 bay leaf
1/3 cup quick-cooking tapioca

Combine the ingredients in a crockpot. Cook on high long enough to get heat up and then on low for 6 to 8 hours.
