Beef-Zucchini Italienne
If you are looking for a delicious meat and zucchini dish, try this one.
Serves: 4
Prep Time: 15 minutes
Cook Time: 40-45 minutes


3 tablespoons butter
3 tablespoons flour
3/4 pound round steak, ground
1 can (16 ounces) tomatoes, chopped
1/2 green pepper, chopped
2 green onions, with tops, minced
1/2 teaspoon basil
1 bay leaf, crushed
Salt and pepper
5 or 6 small zucchini
1 cup grated cheese, (optional)

Melt butter and blend in flour. Add all other ingredients, except zucchini and cheese. Cook slowly for about 8 minutes, breaking up meat well. Slice zucchini thin; do not peel. Parboil 2-3 minutes and drain well. Arrange zucchini in shallow, buttered casserole and pour meat sauce over it. Sprinkle with grated cheese, if desired. Bake 30 minutes at 350 degrees.
