This recipe for borscht is quick and easy to make for the beet lover.

Cook Time: 30 minutes


4 cups beef broth, or water
2 cups beef consomme
2 cups beets, chopped cooked (canned or fresh)
1/2 cup onion, chopped
1 cup celery, chopped
1/4 cup lemon juice
2 teaspoons salt
1/4 teaspoon white pepper
sour cream

Combine broth and consomme; add beets, onion and celery. Simmer 30 minutes. Mash through strainer. Add lemon juice, salt and pepper. Serve hot or cold topped with teaspoon sour cream.
