Antipasto
A great appetizer that serves many!

2 heads cauliflower, separated into florets
3 green peppers, cut in strips
2 bags carrots, cut in strips
1 pound button mushrooms
1 bunch broccoli, florets only
1 1/2 cups olive oil
3 cups tarragon vinegar
1/2 to 3/4 cup sugar
3 cloves garlic, minced
1 tablespoon prepared mustard
1 tablespoon salt
2 tablespoons tarragon leaves
pepper, to taste




Mix all ingredients. Chill at least 12 hours, turning frequently. Drain well before serving.
