Tequenos
This snack or appetizer is great for a party or a get together because it can be premade and frozen.

shortening, or oil for deep fat frying
4 cups flour
1 1/4 teaspoons salt
1/4 teaspoon thyme, powdered
1/4 teaspoon marjoram, powdered
1/8 teaspoon white pepper
1 cup bite-sized shredded wheat cereal, crushed
1 egg, beaten
1/2 cup butter, soft
1 cup milk, warm
1 pound sharp cheddar cheese, cut into strips 1" x 1/8"




Heat fat to 400 degrees. Sift together the flour and seasonings. Stir in cereal crumbs. Add egg, butter and milk. Mix until smooth. Knead several times on floured board, then divide dough into thirds. Roll and stretch until thin, cut into 1/2"-wide strips. Wrap dough slightly to cover and completely seal in cheese. Fry 1 minute or until brown; drain on absorbent paper. Tequenos may be frozen before baking. If so, thaw 1 hour at room temperature before frying. Or, fry a day ahead and reheat in a 400 degree oven for 5 minutes before serving. These are a favorite in Venezuela.
