Alaska Salmon, Beans & Rice Wrap
A great, healthful recipe that everyone will like. What a good way to get your kids to eat more fish!

Prep Time: 10 minutes
Cook Time: 15 minutes


1 package (8- to 10-ounce) red beans with rice
1 can (14 3/4 ounces) salmon, drained and separated into chunks
1 cup shredded Cheddar cheese
1/2 cup chunky salsa
5 (8-inch) flour tortillas

Prepare beans and rice blend according to package directions, omitting any butter if called for.

When nearly cooked (after about 15 minutes), stir in the salmon.

Stir together the cheese and salsa and add to the pan. Cook for 3 to 5 minutes longer until heated through.

Spoon about a 3/4 cup of the mixture near the center of each tortilla. Roll up and serve with more salsa, if desired.
