Artichoke Cheese Squares
Makes a great appetizer!
Serves: 4
Prep Time: 15 minutes
Cook Time: 25-30 minutes


2 tablespoons olive oil
1/3 cup onion, minced
2-3 cloves garlic, minced
4 eggs, (use two whole eggs and only the whites from the remaining two eggs)
14 ounces artichoke hearts, drained, trimmed, and chopped
1/4 cup dry bread crumbs
1/2 pound Swiss cheese
2 tablespoons fresh parsley
1/4 teaspoon oregano
1/2 teaspoon salt
dash Tabasco sauce

Heat oil in skillet, and saute onion and garlic until soft and translucent but not brown.

Beat eggs and whites in bowl; add chopped artichoke hearts. Stir in rest of ingredients.

Pour into greased or sprayed 7 x 11 baking dish. Bake 25-30 min. at 325 degrees F until set. Let cool before cutting into squares.
