Balsamic Spiced Lamb Kebabs
These are the best Kebabs!

Cook Time: 15 to 20 minutes


1 pound boneless American lamb, (leg or shoulder) cut into 1 1/4-inch cubes
3 tablespoons balsamic vinegar, (or red wine vinegar)
2 tablespoons olive oil
2 tablespoons water
2 cloves garlic, minced
1 teaspoon rosemary leaves, dried
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/4 teaspoon ground red pepper
1/4 teaspoon ground coriander
1/2 cantaloupe, firm, peeled and cut into 1- to 2-inch pieces
16 green onions, cut into 2- to 3-inch pices

In bowl combine vinegar, oil, water, rosemary, garlic, cumin, salt, peppers, and coriander. Add lamb cubes; toss to coat. Cover and marinate in refrigerator 6 to 8 hours. Drain meat cubes, reserving marinade. Thread lamb, cantaloupe and green onion on four, 14-inch skewers. Brush with marinade and grill over moderate coals or broil 4 inches from heat. Broil or grill 5 to 7 minutes; turn and brush with more marinade. Broil 5 minutes more or to desired doneness.
