Lamb Curry Skillet with Pasta
The curry adds great flavor!
Serves: 4
Prep Time: 10 minutes
Cook Time: 15-30 minutes


6 oz. penne, or spaghetti
1 tablespoon cooking oil
2 medium carrots, thinly sliced
1 small onion, chopped
1/2 cup green pepper, chopped
1 tart apple, cored and chopped
1 tablespoon cooking oil
1 1/2 teaspoon curry powder
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
3/4 cup milk
3/4 cup beef broth
2 tablespoons all-purpose flour
chopped parsley, optional

Cook pasta according to package directions. Heat 1 Tbsp. oil in large skillet over medium-high heat. Add carrots. Cook and stir 2 minutes. Add onion, green pepper, and apple; cook and stir 2 minutes more. Remove from skillet. Add 1 Tbsp. cooking oil to skillet. Add half of lamb to skillet; cook and stir 3 to 4 minutes. Remove from skillet. Repeat with remaining lamb. Return all lamb to skillet. Add curry, cumin, and cinnamon to skillet. Cook and stir 1 minute. Combine milk, broth, and flour. Add to skillet. Cook and stir until thickened. Cook and stir 1 minute more. Return vegetable mixture to skillet. Serve over hot cooked pasta. Top with parsley if desired.
