Ballpark Cookies
Serve these delicious cookies while rooting on your favorite team.
Serves: makes 7 dozen cookies
Prep Time: 10 minutes
Cook Time: 12-14 minutes


1 cup vegetable shortening
1 cup granulated sugar
1 cup brown sugar
3 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups quick-cooking oatmeal
1 cup salted peanuts
1 cup broken pretzel sticks
1 cup popcorn

Preheat oven to 350 F. In large mixing bowl, cream together shortening and both sugars. Add eggs one at a time, beating well after each. Blend in vanilla. In a smaller mixing bowl, stir together flour, baking soda, baking powder and salt; then gradually add to creamed mixture, and blend well. On low speed of mixer, stir in oatmeal until it just disappears. By hand, stir in peanuts and pretzel sticks.
Line baking sheet with foil and coat with non-stick cooking spray. Drop batter by tablespoonful onto baking sheet 2 inches apart. Press 3 to 5 pieces of popcorn into the top of each dollop of batter. Bake at 350 for 12-14 minutes.
