Strawberry and Pineapple Grilled French toast By Kevin Kolman, Weber Grill Master
This delicious French toast recipe is great for brunch or anytime!

4 large eggs
1 cup buttermilk
2 tablespoons pure vanilla extract
½ tablespoons ground cinnamon
2 tablespoons granulated sugar
8 slices brioche bread (1/2-3/4 inch thick)
8 -stemmed strawberries
8 chunks of pineapple
Additional Toppings
Confectioners’ sugar (powdered sugar)
Butter
Maple syrup




1. In large bowl combine and whisk eggs, milk, vanilla, cinnamon, and sugar. Place pieces of bread inside a 9x13 baking pan. Pour mixture over the bread and turn pieces of bread over once making sure it coats the bread evenly. Let bread sit for about 4-5 minutes before removing.

2. Place strawberries and pineapple chunks on wood skewers.

3. Prepare the grill for direct cooking over medium-low heat (about 350-400).


4. It is critical to your cooking grates are clean before grilling. Place the pieces of bread and fruit onto the grill and set a timer for 3 ½ -4 minutes.

5. Once the timer goes off, using a spatula, flip your pieces of bread and fruit skewers and continue to cook the other side. Set your timer for 3 ½ -4 minutes.

6. Remove the toast and skewers from the grill. Add butter and syrup while the toast is warm. Lightly dust fruit with either powdered sugar or syrup.
