Ontario Apple, Caramelized Onion , and White Cheddar Pizza
This incredible tasting pizza can be served as a meal or dessert.

2 tablespoons (30mL) butter
2 onions, sliced into 1/4 inch (6mm) rounds
2 Ontario apples,cored and sliced into wedges
1/4 teaspoon (1mL)each salt and pepper
1 tablespoon (15mL)cider vinegar
1/2 package frozen puff pastry (1 sheet),thawed
1/2 cup(125 mL) shredded aged white Cheddar cheese
1 tablespoon (15 mL)chopped fresh thyme




Melt butter in large heavy skillet over medium-high heat on the grill or stovetop. Cook onions until caramelized and softened, stirring occasionally, about 15 minutes. Stir in apple wedges and cook 5 minutes longer (apples will be firm and a light golden colour). Season with salt, pepper,and vinegar. Let cool slightly.

Heat your grill to high and spray non-flammable nonstick spray over all the grill grates. Leave the grill lid open.


Roll puff pastry into a flat 10-inch (25 cm) square. Cut a 1/2-inch (1 cm) strip from each side. Brush the edges of the remaining pastry square with water and arrange strips on top, trimming, to form a border (or pizza crust) on all four sides. Using fork, prick bottom of pastry all over.

Place the puff pastry right onto the grill grates for about 1-2 minutes so that the puff pastry is a bit cooked and browned. Flip the puff pastry for another 1-2 minutes, while the grill lid is open. Keep a close eye on the puff pastry as you do not want it to burn.

Add the caramelized onions, apples, and the cheddar cheese to the puff pastry and close the lid for about 2-3 minutes or until the cheese is melted and has started to bubble.

Let cool 5 minutes before slicing into squares. Serve warm or at room temperature.


Tips: For best results, use Ontario Crispin, Empire,or Russet apples.The white Cheddar can also be substituted with an equal amount of Gruyère or smoked Applewood Cheddar.
