Maple Ginger Lemonade
This is a very lightly sweetened lemonade that will cut through any summer heat. The ginger gives it a nice spicy bite, one that isn't completely hidden by the sweet maple.
Serves: 1 qt.
Prep Time: 5 minutes
Cook Time:

4 large lemons, plus extra slices of lemon for Garnish
1 tablespoon grated fresh ginger
1/2 cup (120 ml) Crown maple syrup (Amber Color, Rich Taste)
crushed ice

Squeeze the lemons on a citrus juicer and remove any residual pulp or seeds. You should have about 1 cup (240 ml) juice.
Combine the lemon juice, ginger, and maple syrup in a pitcher, and top with 4 cups (960 ml) cool water. Stir with a long spoon. Refrigerate until ice-cold.

Fill glasses halfway with crushed ice. Taste the lemonade and add more maple syrup to your preferred level of sweetness, then stir and pour over the ice in each glass. Serve with an extra round of sliced lemon.

Tip: Keep your ginger in the freezer—not only will it last longer, but when you need to grate some into this lemonade, you don’t even need to peel it. Just put your grater right to the ginger, and go to work.
