Tuna-Apple Pita Pockets
For an easy change from the expected tuna salad sandwiches, try these pitas, filled to brimming with a tuna salad sweetened ever so slightly with crunchy apples.

1 small apple
1 small celery rib, sliced
1 teaspoon lemon juice
1 small onion, chopped
One 7 ounce can tuna
1 teaspoon dried dill weed
1/2 cup mayonnaise
4 small pita pockets
4 large lettuce leaves

Core the apple and chop it into small pieces. Put the apple in a mixing bowl with the celery and drizzle with lemon juice. Fold in the onion.

Drain the tuna and add to the bowl, breaking it up with a fork as you do. Add the dill and mayonnaise and mix well.

Cut the top off each pita bread. Insert a leaf of lettuce in each and then spoon the tuna mixture on top of the lettuce. Gently push the tuna salad into the pita so it fills the pocket. Serve right away.
