Chicken, Apple and Basil Sausage Patties

Ground chicken held together with juicy apples and onions turns into its own version of a sausage patty. Delicious morning, noon, or night!

1 tablespoon olive oil
1 1/2 cups finely chopped, unpeeled sweet-tart red apples
1/2 cup finely chopped sweet onion
2 small cloves garlic, minced
1/3 cup very finely chopped fresh basil
1 teaspoon rubbed sage
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
1 1/2 pounds ground chicken or turkey (white and dark meat)*




Heat the oil in a skillet over medium-high heat. Add the apple and onion and cook for about 2 minutes or until nearly tender, stirring occasionally. Add the garlic and cook for 30 seconds longer, making sure the garlic does not burn. Transfer to a large bowl and cool to room temperature.


When  cool, stir the basil, sage, salt, coriander, and pepper into the apple mixture. Add the ground chicken and mix with your hands until just combined (do not overwork meat mixture).


With dampened hands, form the mixture into 16 patties, each about 1/2-inch-thick. Lay the patties in a single layer on a baking sheet lined with plastic wrap or wax paper and refrigerate for 2 to 3 hours. (You can also freeze the patties at this point for up to 2 weeks. Allow them to thaw in the refrigerator.)


Heat a nonstick skillet over medium heat and when hot, cook the patties for 6 to 8 minutes or until an instant-read thermometer inserted near centers reads 165° F. Turn them halfway through cooking. Drain on paper towels before serving.


Note: To grind your own ground chicken, cut boneless skinless chicken breasts and thighs into 1-inch pieces. and pulse in the bowl of a food processor fitted with the metal blade until ground and holds together when pressed with your fingers (do not overprocess).
