Breakfast Sausage Pizza
Your kids will love the idea of pizza for breakfast. Replace the sausage with ground pork, diced ham or chorizo. All good! Fresh fruit completes the meal.

Cook Time: 25 minutes


6 ounces bulk pork sausage
4 strips thick-cut bacon, cut in half
1/2 cup thinly sliced onion
8 large eggs, beaten
1/4 cup snipped Italian parsley
1/2 teaspoon salt
1/2 teaspoon black pepper
10-inch pizza crust, store bought

Preheat the oven to 400°F. I

n a large skillet, cook the sausage, 2 strips of the bacon, and onions over medium-high heat for 10 to 15 minutes or until browned. Remove with a slotted spoon and set aside. Drain all but 1 teaspoon of the drippings from the pan.

Add the eggs, parsley, salt and pepper to the pan and cook for 2 to 3 minutes, stirring until just scrambled.

Meanwhile, put the pizza crust on a pizza pan or baking sheet and top with 1/2 cup of the cheese. Bake for 3 to 5 minutes until the cheese melts.

Top the pizza with the scrambled eggs, sausage, bacon and onion. Top with the remaining 2 strips of bacon and the rest of the cheese. Bake until the cheese is melts and the bacon is crisp. Serve garnished with more parsley, if desired.
