Boneless Pork Loin Roast with Herbed Pepper Rub
What doesn’t taste good with this glorious, cheese-and-herb rubbed roast? Try scalloped potatoes, roasted Brussels’ sprouts, pureed butternut squash, and some warm dinner rolls.

3 pound boneless pork loin roast
2 tablespoons cracked black pepper
2 tablespoons grated Parmesan cheese
2 teaspoons dried basil
2 teaspoons dried rosemary
2 teaspoons dried thyme
1/4 teaspoon garlic powder
1/4 teaspoon salt




Preheat the oven to 350°F. Pat the pork dry with paper towels.


In a small bowl, mix together the pepper, Parmesan, basil, rosemary, thyme, garlic powder, and salt. Rub the mixture into the pork, working it into all surfaces. Put the pork in a shallow roasting pan and roast for about 1 hour (20 minutes per pound), or until the internal temperature on an instant-read thermometer reaches 145° F.


Remove the roast from the oven and let it rest for about 10 minutes before slicing.
