Rice Tabbouleh
An easy rice salad, this one will please everyone. Plus, because it's so colorful, it looks like confetti.

3 cups cooked long-grain rice
1 cup chopped flat-leaf parsley
3/4 cup chopped cucumber
3/4 cup chopped tomato
1/4 cup minced mint leaves
1/4 cup olive oil
1/4 cup lemon juice
1 teaspoon salt
1 teaspoon ground black pepper

In a large bowl, toss the rice with the parsley, cucumber, tomato, mint, olive oil, lemon juice, salt and pepper. Taste and adjust the seasonings with salt and pepper, if needed.

Per Serving: 190 calories; 10 g fat; 400 mg sodium; 24 g carbohydrate; 1 g fiber; 3 g protein
