Walnut Rice With Cream Cheese, Mushrooms and Spinach
Looking for a rich and creamy meat-free meal? Try this mushroomy rice flavored with spinach and walnuts.
Serves: 6
Prep Time: 10 minutes
Cook Time: 5 to 8 minutes


1/3 cup unsalted butter or margarine
2 cups sliced mushrooms
One 3-ounce package cream cheese, cubed
3 cups cooked long-grain rice
2 cups torn, loosely packed fresh spinach
1/2 cup grated Parmesan cheese
1/2 cup chopped walnuts
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Melt the butter in a large skillet over medium heat and when hot, cook the mushrooms for 2 to 4 minutes or until softened. Add the cream cheese and stir until melted. Reduce the heat to medium-low, stir in the rice and cook for 3 to 4 minutes or until heated through.

Transfer the rice to a large mixing bowl and add the spinach, Parmesan cheese, walnuts, and salt and pepper. Toss well and adjust the seasonings, if needed.
