Santa Fe Smokin' Rice Salad
This boldly flavored rice salad is a hit any time of year. If you can find bottled creamy garlic-cilantro salad dressing, use it here. Otherwise, we explain how to make your own dressing.

3 cups cooked long-grain rice, cooled to room temperature
1 1/2 cups shredded smoked Gouda cheese
1 cup cubed smoked turkey breast
2 plum tomatoes, coarsely chopped
1/4 red onion, cut into 1/2-inch slices
1/2 cup bottled ranch dressing
1 tablespoon chopped cilantro
Salt and freshly ground black pepper

In a large bowl, mix together the rice, cheese, turkey, tomatoes, and onion.

In a small bowl, whisk the ranch dressing with the cilantro. Season to taste with salt and pepper. Toss the dressing with the rice mixture and season again with salt and pepper. Serve at room temperature.

Note: Ranch-style dressing mixed with 1 tablespoon chopped fresh cilantro may be substituted for creamy cilantro dressing.
