Easy Egg Breakfast Quesadillas
Try an easy quesadilla for an on-the-go egg breakfast. It’s simple to wrap up your favorite breakfast ingredients to take with you.

1/2 cup shredded Mexican cheese blend
2 whole wheat or flour 7-inch tortillas
4 slices Canadian-style bacon, fully cooked
Cooking spray
4 large eggs, beaten

Sprinkle half the cheese on one side of each tortilla. Top each with 2 bacon slices.

Coat a large nonstick skillet with cooking spray and heat over medium heat until hot. Pour in the eggs. As the eggs begin to set, gently pull them across the pan with an inverted pancake turner to form large, soft curds.
Continue cooking, pulling, lifting and folding the eggs until thickened and no visible liquid egg remains. Do not stir constantly.

Spoon the eggs on top of the bacon, dividing them evenly. Fold the tortillas over the filling to cover and press gently to close.

Wipe the skillet clean with paper towels. Coat with cooking spray and heat over medium-low heat. When hot, toast the quesadillas for 1 to 2 minutes on each side, or just until the cheese is melted. Cut into wedges and serve with salsa.
