Traditional Latkes
These flavorful potato pancakes are easy to make and really tasty.  Use them as a vegetarian main course or as a deliciously different side dish.
Serves: 6 servings
Prep Time: 15 minutes
Cook Time: 10 minutes


3 large potato, unpeeled
1 small onion
2 eggs, lightly beaten
2 tablespoons all-purpose flour
1/2 cup Crisco® Vegetable Oil
sour cream

Grate the potatoes and onion into a large bowl.
Stir the eggs and flour in the bowl until well mixed. Let the potato mixture stand for 10 minutes or until thickened. Spoon off any excess liquid that gathers around the edges or on the surface.
Heat the oil in a 10-inch skillet over medium-high heat for 1 minute.
Using your hands, form the potato mixture into 2-inch pancakes (latkes). Carefully drop the pancakes into the hot oil and cook for 30 seconds on each side or until they're golden brown. Drain the pancakes on paper towels.
Serve the pancakes warm or at room temperature with applesauce and sour cream on the side, if desired.
