Classic Cornbread
You'll be surprised how easy it is to make this versatile bread at's great on it's own, or to accompany southern or southwestern fare.
Serves: 8 servings
Prep Time: 15 minutes
Cook Time: 20 minutes


1 cup white or yellow cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup milk
2 tablespoons unsalted butter, melted

Heat the oven to 400°F.  Lightly grease a 9-inch square baking pan.
Stir the cornmeal, flour, baking powder, baking soda, and salt in a large bowl.
Beat the eggs, milk and butter in a medium bowl with a fork or whisk.  Add the egg mixture to the flour mixture and stir just until combined.  Pour the batter into the baking pan.
Bake for 20 minutes or until a toothpick inserted in the center comes out clean.  Let the cornbread cool in the pan on a wire rack for 10 minutes.
