Avocado Soup
Cool and creamy, this soup is especially enticing on a hot summers day.  It's easy enough to make for the family, but special enough to serve your guests.

Cook Time: 5 minutes

 

 
1 tablespoon olive oil
1 tablespoon chopped shallot
2 medium avocado, pitted, peeled and cut up
2 cups Swanson® Chicken Broth (Regular, Natural Goodness® or Certified Organic)
1 cup heavy cream
1/4 teaspoon ground nutmeg
1 medium tomato, diced (about 1 cup)




Heat the oil in an 8-inch skillet over medium heat.  Add the shallot and cook until tender, stirring occasionally.
Place the avocados into a food processor or blender.  Cover and blend until smooth.

Stir the avocados, broth, heavy cream, nutmeg and shallot in a large bowl.  Cover and refrigerate for 30 minutes.  Sprinkle with the tomato before serving.
