Chicken & Stuffing with Lemon Honey Glaze
This super-easy chicken and stuffing bake features a kid-friendly lemon-honey glaze...but you'll find that the adults love it too!
Serves: 4 servings

Cook Time: 1 1/2 hours


1 3/4 cups Swanson® Vegetable Broth (Regular or Certified Organic)
2 tablespoons butter
2 medium carrots, peeled and shredded (about 1 cup)
5 cups Pepperidge Farm® Herb Seasoned Stuffing
4 bone-in chicken breast half (about 2 pounds)
2 tablespoons honey
2 tablespoons lemon juice
1 teaspoon dried parsley flakes or 1 tablespoon chopped fresh parsley

Heat the broth, butter and carrots in a 3-quart saucepan over medium-high heat to a boil.  Remove the saucepan from the heat.  Add the stuffing and mix lightly.
Spoon the stuffing mixture into a greased 3-quart shallow baking dish. Top with the chicken.  Stir the honey, lemon juice and parsley in a small bowl.  Brush the chicken with the honey mixture.
Bake at 375°F. for 1 hour or until the chicken is cooked through.
