Beef & Vegetables Lo Mein
Snow peas and red pepper add color and crunch to this easy-to-make stir fry that's on the table in just 30 minutes. It's so much better than take-out.
Serves: 4 servings (about 1 1/2 cups each)

Cook Time: 15 minutes


3 packages (3 ounces each) beef flavor ramen noodle soup
1 tablespoon vegetable oil
4 ounces snow peas, diagonally cut into 1-inch pieces (about 1 cup)
1 medium red pepper, cut into 2-inch-long strips (about 1 cup)
2 jars (12 ounces each) Campbell's® Slow Roast Beef Gravy
2 tablespoons honey
2 tablespoons soy sauce
1/4 teaspoon ground ginger
1 1/2 cups cooked beef, cut into strips

Prepare the ramen noodles according to the package directions. (Reserve the seasoning packets for another use.) Drain off most of the liquid.
Heat the oil in a 10-inch skillet over medium heat. Add the snow peas and pepper and cook until they're tender-crisp.
Stir the gravy, honey, soy, ginger, beef and noodles in the skillet and heat through, stirring occasionally.
Helper: To make slicing easier, freeze the beef for 1 hour before slicing.
