Breakfast Tacos
Scrambled eggs with diced potato, crumbled bacon, cheese and picante sauce fills warm flour tortillas for a bold start to the day!
Serves: 2 servings (2 tacos each)
Prep Time: 10 minutes
Cook Time: 10 minutes


1 tablespoon butter
1 cup diced cooked potato
4 eggs, beaten
4 slices bacon, cooked and crumbled
4 flour tortilla (8-inch), warmed
3/4 cup Shredded Cheddar cheese (about 3 ounces)
1/2 cup Pace® Picante Sauce

Heat the butter in a 10-inch skillet over medium heat. Add the potato and cook until it's lightly browned, stirring often. Stir the eggs and bacon in the skillet and cook until the eggs are set, stirring often.
Spoon about 1/2 cup potato mixture down the center of each tortilla. Divide the cheese and picante sauce evenly among the tortillas.  Fold the tortillas around the filling.
