Creamy Potato Salad
A great way to make your backyard barbecue exciting.

6 cups potatoes, peeled, cooked, and sliced
1 cup celery, thinly sliced
2 sliced green onions, including tops
1 cup peeled, diced cucumbers
1 teaspoon salt
4 hard-cooked eggs, chopped
1 cup mayonnaise
1 cup sour cream
1 teaspoon prepared horseradish mustard
fresh parsley, (if desired)

Combine first six ingredients in large serving bowl. Then combine the rest of the ingredients together, mix into salad. Sprinkle on fresh parsley.
