Apricot Stuffing
The apricots are a wonderful addition to this traditional dish.

Cook Time: 40 minutes


3 cups bread cubes, day-old sourdough
3/4 cup (5 ounces) dried apricots, diced
1/2 cup celery, chopped
1/2 cup pine nuts
1/3 cup green onion, chopped
1/4 cup olive oil
1 tablespoon basil, chopped fresh (or 1 teaspoon dried)
1 garlic clove, minced

Combine bread cubes, apricots, celery, pine nuts, and onion; set aside. Combine chicken broth and remaining ingredients; sprinkle over bread mixture. Toss to coat evenly. Loosely stuff a small turkey or chicken. Or bake stuffing in a buttered casserole dish at 375 degrees for 40 minutes, or microwave on high 5 minutes, tossing once during cooking.
