Caraway Lamb Meatloaf
The corn and caraway seeds add a different dimension to this meatloaf.

3/4 cup bread crumbs, rye, about 1 slice, torn
1/2 cup creamed corn
1/2 cup onion, finely chopped
2 egg whites, (or 1 whole egg)
1 tablespoon dried parsley flakes
1 teaspoon caraway seeds
1/4 teaspoon black pepper
1 pound ground lamb, lean

In a bowl, combine bread crumbs, corn, onion, egg whites, parsley flakes, caraway seeds, and pepper. Mix well. Stir in ground lamb until well mixed. Shape into one loaf about 3 1/2 x 7-inch and place in a loaf pan. If desired, shape into 4, 2x4-inch loaves. Bake the large loaf in 350 degree oven for 45 to 50 minutes; or bake the small loaves for 35 to 40 minutes. Remove from pan and let stand 5 minutes before slicing.
