Lamb Chops with Fresh Mango Relish
One large or two small mangoes should yield the needed 2 cups.

1/2 cup onion, finely chopped
1/2 cup fresh jalapeno peppers, finely chopped, stemmed and seeded
1/2 cup rice vinegar
1/4 cup light brown sugar
4 teaspoon fresh ginger
1/4 teaspoon salt, and more to taste
2 cups roasted red peppers, chopped, bottled
2 cups mango, coarsely chopped
black pepper, to taste
2 teaspoons olive oil
12 lamb chops, rib or loin

In medium saucepan, combine onion, jalapenos, vinegar, sugar, ginger and 1/4 teaspoon salt; bring to simmer and cook over low heat for 5 minutes. Add mango and simmer 5 minutes longer, or until thickened.

Remove from heat and stir in roasted peppers; set aside at room temperature while you prepare lamb chops. (If made in advance, cover and refrigerate, letting return to room temperature before serving.)

Place broiler rack about 6 inches from heat and preheat broiler. Line baking sheet with foil and set wire rack on top. Brush both sides of chops with oil and season liberally with salt and pepper; place on rack.

Broil to desired doneness, 4 to 5 minutes per side for medium-rare, depending on thickness. Serve topped with mango relish
