Mediterranean Pasta
The herb mixture enhances the flavor of this dish.

6 ounces yolkless fine noodles
1 cup white button mushrooms, sliced
1 cup white onion, chopped
2 cups broccoli florets
1/4 cup water
1 can (6 ounces) light tuna in water
1 tablespoon flour
1 cup skim milk
1/2 tablespoon fines herbes
freshly ground black pepper

Bring a large saucepan of water to a boil.

Add the noodles to the boiling water and cook over medium-high heat for about 4 minutes, until tender. Drain and set aside.

Preheat a large nonstick skillet over medium-high heat.

Combine the mushrooms, onion, broccoli, and 1/4 cup water in the hot skillet. Stir, cover, and cook for about 3 minutes, until the water has evaporated, the onion is translucent, and the broccoli is bright green. Meanwhile, drain the tuna and mix the flour into the skim milk.

Stir the milk and flour mixture and the fines herbes into the skillet. Stir in the tuna. Add the noodles to the skillet and toss to mix well. Cook for 30 to 60 seconds more, until the liquid has been absorbed and the mixture is steamy. Season with salt and pepper.

Note: For fines herbes, combine dried herbs such as thyme, winter savory, rosemary, marjoram, rubbed sage and basil. Keep extra on hand for future use.
