Egg Salad Sandwich
Egg salad sandwiches are a delicous option when you run out of cold cuts. Keep chilled until serving.

4 hard-cooked eggs, chopped
1/2 cup celery, chopped
1/4 cup red onion, chopped
1/4 cup mayonnaise
1/2 teaspoon mustard powder
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
8 slices white bread

Mix eggs, celery, red onion, mayonnaise, dry mustard, salt, and pepper in a medium-sized mixing bowl.

Divide egg salad mixture evenly among 4 bread slices. Top egg salad mixture with remaining 4 bread slices. Cut sandwiches in half and serve immediately or refrigerate until serving.
