Broccoli and Cabbage Stir-Fry
Stir-fry vegetables cook quickly yet retain their crispness and flavor.

2 tablespoons Vegetable Oil
1 large onion, finely chopped
1 clove garlic, finely chopped
2 stalks celery, thinly sliced
1 cup sliced broccoli
1 cup cut and trimmed string beans
1 cup shredded white cabbage
1 scallion, chopped
1 bunch watercress, chopped
1 tablespoon soy sauce

Heat the oil in a wok or heavy frying pan. Add the onion and garlic and stir-fry for 1 minute. Add the celery and stir-fry for 2 minutes. Add the broccoli and string beans and stir-fry for 2 minutes. Add the cabbage, scallions and watercress and stir-fry for 2 minutes. If any water has accumulated, let it evaporate over high heat.

Sprinkle the vegetables with the soy sauce. Toss well and transfer to a serving platter.
