Balsamic Vinaigrette
Vary this dressing with capers, garlic, scallion, tomato or herbs.
Serves: 2/3 cup

2 tablespoons balsamic vinegar
Pinch of salt and pepper
7 to 8 tablespoons olive oil

In a small bowl, whisk together the vinegar and salt and pepper to taste. Gradually whisk in the oil. The vinaigrette should be emulsified although it will not be as thick as the mustard vinaigrette.
