Humongous Chocolate Brownies
They'll give you a humongous hug for making these delicious brownies

3/4 cup Dutch processed cocoa powder
1/2 cup water, boiling or 2 tablespoons water, boiling
1/4 cup light corn syrup
1 teaspoon instant coffee granules, (optional)
3/4 cup nonfat egg substitute
1 1/2 cups granulated sugar
2/3 cup natural unsweetened applesauce
3/4 cup all-purpose flour

Preheat the oven to 350 degrees.

In a small bowl, combine the cocoa powder, boiling water, corn syrup, and, if desired for a slightly richer-tasting brownie, the instant coffee granules. Mix with a wooden spoon or a spatula until smooth and glossy.

Put the egg substitute into a large mixing bowl and whisk a few times until frothy. Add the granulated sugar and whisk until combined, slightly thickened, and pale, about 30 seconds. Whisk in the applesauce, then the cocoa mixture. Mix in the flour with a wooden spoon.

Pour the batter into a 9-inch nonstick pan. Bake for about 20 minutes, until firm. Cool in the pan on a wire rack.
