Buttermilk Biscuits
Double this recipe for a big meal. There never can be too many hot biscuits!
Serves: makes 8 to 10
Prep Time: 30 minutes
Cook Time: 10 to 12 minutes


2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons non-fat cream cheese
2 tablespoons nonfat sour cream
1 cup buttermilk
Light vegetable oil cooking spray
2 tablespoons skim milk

Preheat the oven to 400 degrees.

In a large mixing bowl, stir together the flour, baking powder, baking soda, and salt. Using a pastry blender or 2 dinner knives, cut in the cream cheese and sour cream until the mixture resembles coarse crumbs. Stir the buttermilk in all at once. Mix just until moistened and the dough holds together.

With lightly floured hands, gather the dough into a ball, knead in the crumbs, and transfer to a lightly floured surface. Roll out to a thickness of 1/2 inch.

With a glass or a cookie cutter, cut out 2 to 2 1/2-inch circles.

Spray a nonstick baking sheet once lightly with the vegetable oil spray and spread the oil over the surface. Put the biscuits on the sheet and brush them with the skim milk.

Bake for about 12 minutes or until lightly browned. Remove the baking sheet from the oven and serve the biscuits hot.
