Black Bean Dip
Serve with tortilla chips.

1 can (15 ounce) black beans, rinsed and drained
2 tablespoons carrots, finely chopped
2 tablespoons celery, finely chopped
1/2 tablespoon garlic, minced
1/4 cup plain nonfat yogurt
1 tablespoon fresh cilantro, plus additional for garnish, chopped
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon salt

Put half the beans into a large mixing bowl and mash roughly with a fork. Add the rest of the beans, along with the remaining ingredients. Mix thoroughly. Cover and chill.

Garnish with the additional cilantro.
