Apple and Spice Omelet
As good as this dish tastes for breakfast, try it for lunch and supper, too.

2 slices bacon, cut into small pieces
1 small tart apple, thinly sliced
1 tablespoon honey
Pinch of cinnamon
Pinch of ground nutmeg
1 tablespoon butter or margarine, melted
4 eggs, separated
salt and pepper, to taste

Put the bacon in a small glass bowl and microwave on High (100 percent) for 3 to 4 minutes or until the bacon is crisp. Drain the bacon, discarding the drippings.

Combine the apple, honey, cinnamon and nutmeg in a bowl and set aside. Pour 1 tablespoon of melted butter onto a 9-inch glass plate, turning the plate to coat it.

Beat the egg whites with a whisk until stiff but not dry. Lightly beat the egg yolks with salt and pepper to taste. Fold the egg whites into the yolks and spoon the mixture onto the glass plate. Microwave on Medium (50 percent) for 4 to 5 minutes until the eggs have set.

Loosen the eggs from the plate with a spatula. Spoon the apple mixture over half the omelet and fold over the remaining side. Cover and let stand for 2 minutes before serving.
