Cheesy Turkey Ham, Spinach and Noodles
All this noodle dish needs is a tossed salad and garlic bread.

vegetable spray
1 teaspoon garlic, minced
1 pound turkey ham, 1/2-inch deli cut slices, cut into 1/2-inch cubes
1 10 ounce package spinach, frozen, chopped, defrosted and drained
1 cup non-fat cottage cheese
2 tablespoons dried parsley flakes
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup water
1 6 ounce package no yolk egg noodles, cooked
6 tablespoons Parmesan cheese, grated




In 12-inch nonstick skillet sprayed with vegetable spray over medium high heat, saute garlic for 30 seconds.

Toss in turkey ham cubes and saute for about 2 minutes. Add spinach, separating to combine.

Reduce heat to medium; stir in cottage cheese, parsley flakes, Italian seasoning, salt and pepper.

Add noodles; cook until hot, about 2 to 3 minutes.

Serve immediately, topping each serving with a tablespoon of Parmesan cheese.
