Chicken Enchilada-sagne
A fast, easy, delicious Mexican dish with minimal cleanup.

3 boneless, skinless chicken breasts, sliced
1 medium red onion
1 large can enchilada sauce, red or green
12 tortillas, soft taco size
shredded Monterey Jack cheese
shredded Cheddar cheese

Preheat over to 400. Saute chicken and onion in skillet over medium heat until chicken is done and onions are soft. Slice tortillas in half (I use a pizza cutter), set aside. Prepare a 13 X 9 inch pan by coating bottom with 1/4 of the enchilada sauce. Place a layer of tortillas over sauce - flat side to the edge of the pan. Cover with 1/2 of the chicken and onion mixture and top with cheese and 1/4 of the sauce. Repeat with second layer - just like a lasagne. Top with remaining tortillas and sauce and a generous amount of cheese. Bake until heated through and cheese is golden and bubbly, about 20 minutes.
