Lemony Gingered Shrimp and Rice
"There are plenty of fish in the sea and they all go nicely with rice."

2 cups UNCLE BEN’S® Boil-In-Bag rice
1/2 lb. shrimp, peeled, de-veined
1 1/2 tsp. ginger, fresh finely shredded
1 1/2 tsp. lemon peel
1 clove garlic minced
1/3 cup chicken broth
2 tbsp. vegetable oil
1 1/2 tsp. sugar
3 green onions with tops cut into thin strips
2 tbsp. fresh lemon juice

1. Cook rice according to package instructions. While rice is cooking, heat oil in 10-inch skillet over medium-high heat until hot but not smoking.
2. Add shrimp and garlic. Cook and stir 1 to 2 minutes.
3. Add broth, lemon peel, lemon juice, ginger and sugar. Reduce heat to medium. Cook and stir until shrimp are cooked through, 2 to 3 minutes.
4. Stir in green onion.
5. Serve over cooked rice.
