Chicken Piccata
Great entree for a simple dinner that is special!
Serves: 2 to 4
Prep Time: 5 minutes
Cook Time: 10 minutes


2 to 4 boneless chicken breasts, (not too thick) or 2 to 4 boneless chicken breasts, (not too thick)
2 tablespoons olive oil or 2 tablespoons olive oil
1/4 cup flour or 1/4 cup flour
1 teaspoon salt or 1 teaspoon salt
1/2 teaspoon pepper or 1/2 teaspoon pepper

--If breasts are thick, place chicken pieces between two sheets of heavy duty plastic wrap and pound to 1/4 inch thickness with meat mallet or rolling pin.
--Heat oil in large skillet over medium-high heat.
--Meanwhile, combine flour, salt, and pepper in a shallow bowl.
--Dredge chicken in flour mixture, shaking to remove excess.
--Saute chicken in skillet 3 minutes on each side, or until chicken is no longer pink. Transfer to warmed plates or wrap in tinfoil to keep warm.
--Add wine to skillet and cook over medium-high heat 2-4 minutes, stirring to loosen particles from bottom of skillet.
--Stir in lemon juice, butter, and capers. Spoon sauce over chicken, sprinkle with lemon zest (lemon peelings) and parsley. Garnish with lemon slices and serve immediately.
