Baked Sunday Pancake with Raspberry Sauce
Dutch Baby. Puffy, eggy baked pancake. Easy to make in a blender.
Serves: 2-4
Prep Time: 15 minutes
Cook Time: 20 minutes


3 to Tbsp butter
3 large eggs
3/4 C milk
1/2 tsp vanilla
1/2 C all-purpose flour
2 Tbsp sugar
1/8 tsp salt
Raspberry sauce

1. Melt butter in 10-inch ovenproof frying pan over low heat. Remove from heat.
2. In large bowl or blender, beat or whirl eggs until light and pale. Beat or blend in milk, vanilla, flour, sugar, and salt.
3. Pour batter into melted butter pan and bake in a 425° oven until pancake is puffed and lightly browned, 15-20min. Slice into wedges and serve immediately with raspberry sauce or dust with powdered sugar and a squeeze of lemon.
